Stir Fried Cucumber Strips - Image Copyright

Here is one of my favorite simple recipes for cucumber, that makes an attractive and delicious dish. You can play around with these ingredients, swapping them for other things. For example, use fresh dill instead of basil, or lime juice instead of rice vinegar. Throw on some rice to cook while you prepare these stir fried cucumber strips, and enjoy a fast and easy hot meal that is healthy and low in calories.

What you need:

2 small cucumbers, unpeeled
4 tblsp. soy sauce
2 tblsp. rice vinegar
2 tblsp. brown sugar
2 tsp. black sesame seeds
8 fresh basil leaves
pinch black pepper

Make it!

  1. slice the cucumbers lengthwise into strips
  2. in a small bowl mix together soy sauce, rice vinegar and brown sugar
  3. heat a wok over high heat
  4. add the sesame seeds, stirring constantly to cook for 1 minute
  5. add soy sauce mixture and cucumber slices
  6. stirring constantly and cook for 2 minutes
  7. remove from heat
  8. add basil leaves and pepper and stir
  9. serve immediately
